Natural Pumpkin Casarecce with Roasted Pumpkin

Ingredients

  • 1 Bag West MI Pumpkin or Fall Colors Flavored Casarecce

  • 2 Cups Pumpkin or squash, medium diced

  • 1 Red onion or a few shallots, sliced

  • ¼ Cup Sundried tomatoes, thin sliced or chopped

  • 2 Tbsp. Fresh Rosemary, fine chopped leaves

  • ¼ Cup Extra Virgin Olive Oil (Oleavanti EVOO)

  • Salt and fresh ground pepper, to taste

Cook the pasta until just a touch soft, then cool. Roast the pumpkin with a little olive oil, 450 degree oven. Sauté the red onion or shallots until well caramelized. 

Mix pumpkin, onions, sun dried tomatoes, olive oil, chopped fresh rosemary with cooled pasta and check salt and pepper.  Serve warm or keep refrigerated.  

Try adding other roasted root vegetables, toasted nuts, or some fruits like apples, pears or pomegranate seeds.
